BUBUR LAMBUK ala KAMPUNG BARU

Bagi sesiapa yg suka makan bubur lambuk masjid kampong baru...resepi ni boleh la menjadi pengubat rindu. Nak suruh cik Abang beratur kat sana masa bulan puasa....nan ado la kan....teringat arwah Abah yg rajin naik motor dari ampang pi kg baru ambik bubur ni...especially masa I pregnant dulu. One of my daughter sangat la suka makan bubur....tak kira la...bubur kosong pun jadi la.

Berbalik kepada resepi ni...keratan the star...tak ingat tahun bila...credit given to chef Fazli Baharudin yg merupakan sous chef di Sunway Resort Hotel at that time and inherited the recipe from his grandmother, who used to cook bubur lambuk at kg baru mosque. As I said earlier...boleh la jadi pelepas rindu.

So...here is the recipe...

Ingredients:

200 gm white rice
200 ml thick coconut milk ( I used ayam brand)
500 gm beef - chopped into bite-size ( I put roughly 300gm)
2 stalk lemon grass
2 tablespoons ghee
3 tablespoons oil
Salt to taste
Water

Spice mix:
1 inch cinnamon stick
3 pcs clove
1 pc star anise
2 pcs cardamon

Pounded ingredients:
1 inch piece of ginger
6 pcs shallot
6 pcs garlic

Blended ingredients:
1 teaspoon cumin seed
1 teaspoon coriander seed
1 teaspoon white pepper
1 teaspoon black peppercorn

Method:
- Heat oil and ghee. Add pounded ingredients and stir-fry till fragrant.
- Add spice mix, blended ingredients and beef pieces. Cook until meat is tender
- Pour in water before adding rice and lemon grass. Bring rice and water to a boil, then reduce heat and simmer till rice turns into the texture of porridge.
- Add coconut milk and season to taste with salt.
- Serve dish with a sprinkle of fried shallots

Tu dia....sila la translate sendiri ye. Nampak macam susah je kan...tapi sebenarnya senang je. Lagi senang...buat bubur nasi dulu...then tumis la bahan2 lain dalam kuali...lepas tu campurkan dalam periuk bubur tadi....daging cincang tu beli brand ramly pun senang jugak tapi berlemak la sikit. Boleh je tambah sayur carrot dan kentang...dadukan lagi elok.

Bila dah masak...rasa dan tambah garam, perasa atau santan ikut citarasa masing2...
